I really adore cake pops. I can't tell you I think they taste better than an actual cake, but they are so pretty and petite I just can't get enough of them. I made some glittery ones for a birthday celebration.
You'll need: (one cake makes about 40 good sized pops):
- Funfetti cake mix (plus the egg, oil, etc.)
- Funfetti frosting
- White chocolate chips
- Edible gold sugar/glitter
- Lolly-pop sticks
Directions:
- Bake the cake according to directions, but don't mix in the sprinkles until you crumble later, and cool completely
- Crumble the cooled cake up with your hands and mix in the frosting and sprinkles
- Form into balls that fit easily in your palm
- Put the lolly-pop sticks in them about 2/3 of the way through and rest on wax paper
- Freeze for 30 minutes
- Melt the white chocolate in your microwave, and dip, sprinkle with the gold sugar immediately
- Let them cool upright in a craft foam block

Yummy, they look so cute and delicious. I suppose another benefit is portion control, right? Hahahah :)
