Sam and I are trying to start a new tradition: a dressed up dinner together on Fridays. I'm excited for the time to ourselves, and the excuse to try out lots of great recipes! In light of this, I'm hoping to start a new series on the blog, Dinner for Two. It can be hard to modify a meal for just 2 people, so I'll try it out and then give you the deets! Up this week: Tilapia over a Sweet Potato and Carrot Mash with a Mustard Chive Sauce. And the best part you ask? This took less than 30 minutes to get on the table. No joke.
Tilapia over a Sweet Potato and Carrot Mash with a Mustard Chive Sauce
Time: about 30 mins, Serves 2
Ingredients:
Tilapia
- 2 servings of tilapia (about 1 pound)
- Olive Oil
- Salt and Pepper
Mash
- 1 tbsp olive oil
- 1/4 c chopped onion
- 1 clove garlic, minced
- 1/2 lb Sweet Potato
- 1/2lb Carrots
- 1-2 cups of chicken broth
- 1/2 tsp salt
- 1/2 tsp peper
Sauce
- 1 tbsp plain greek yogurt
- 1/2 tbsp honey
- 1/2 tbsp dijon mustard
- 1 tbsp lemon juice
- Fresh chopped chives
- Salt and Pepper to taste
Directions:
- Wisk together sauce ingredients and set aside
- Chop sweet potato and carrots (the smaller they are, the faster they cook!)
- Heat olive oil over medium heat, add onions and garlic, cook for 2 minutes or until fragrant
- Add sweet potato, carrots, salt and pepper and cook about 5 minutes to soften
- Add chicken broth until veggies are just covered, and simmer until cooked through
- While the mash is simmering, heat up the broiler
- Season tilapia with olive oil, salt and pepper
- Broil for 6 minutes, or until cooked through
- When the veggies are done cooking, remove most of the cooking liquid and puree in a blender, leaving some chunks. Add more liquid as needed to make the mash.
- Plate the mash, then tilapia, then sauce and garnish with more fresh chopped chives. Enjoy!
